Salt, pepper and lemon, oh my!

When I interned in the kitchen of a Michelin-Star restaurant in the West Village, I was shocked by the simplicity of their seasonings. Basically, everything was seasoned with kosher salt, freshly grounded pepper and/or crushed red pepper flakes. High quality food, fresh herbs and expensive oils were used, but for the most part, all the food relied on a few simple seasonings. This philosophy can be applied to your own kitchen. There are only a handful of “flavors of love” that you need to make your food taste delicious. Make sure you always have these things in stock.

-Kosher salt: It dissolves slower while cooking so make sure to season to taste.)

-Freshly ground pepper: Invest in a pepper grinder and buy whole peppercorns.

-Crushed red pepper flakes: Use in various quantities to add a bit of spice to any cuisine.

-Fresh garlic: Buy a garlic press! It makes using garlic so much easier.

-Extra virgin olive oil: For everyday cooking just stick to the cheaper brands. However, keep a nice bottle on hand to make any salad divine.

-Lemons: They are very multi-purpose, from vinaigrettes to cocktails. Add a little acid to most recipes (like vegetables, chicken, fruit) and it will taste better.
