Ode to Eggs, Part Deux: Breakfast All Day Long

Knowing how to scramble eggs should really be a must know for life, like how to change a tire, how to sew a button, how to save money…yeah, gotta work on that last one. WELL, in the meantime, here’s a little tutorial on how to scramble eggs. Yay! and since eggs are nutritious and cheap, this is kinda like a tutorial on how to save money too! Double yay!

How to scramble eggs:

Whisk two eggs with a fork. Season with pepper and/or herbs (fresh or dry).
Add olive oil or butter to a pan. Bring the pan to a medium high heat. Add the eggs.
Stir eggs slowly with a wooded spoon, allowing for the uncooked parts to meet the pan.
Cook until the eggs like look creamy shiny ribbons. Season with salt and give it one more large stir.
Serve warm. 
 
And look three recipes that use your new life skill to cook breakfast all day. Triple yay?!! I think so.

Breakfast:
-Add fresh herbs, like chives, parsley
-Serve with fresh ripe peaches and honey

Lunch:
-add ham and swiss cheese (add when you are stirring the eggs)
-serve with fresh green salad and tomatoes.

Dinner:

-Add cooked hot or bell peppers and onion (cook first then add eggs). Serve on multi grain toast.

-Serve with salad of sliced cucumbers, sliced farm fresh summer zuchinni, lemon juice , mint, walnuts and salt & pepper.
