
Beets are a misunderstood vegetable for the home cook. They are on most restaurant menus as a salad and or as a side. However, people rarely cook beets at home. They are extremely nutritious and delicious. But, now it’s easy to make at home. (Warning, when you eat beets, it comes out the other side red so do not be alarmed!)
Pre-heat the oven to 350 degrees. Wash a bunch of beets. Cut off the greens and save them for later. Peel the beets then cut them into small cubes. On a baking sheet, lay down a piece of foil. Place the beets on the foil and drizzle with olive oil then season with salt, pepper and chopped garlic.
Make an enclosed pouch with the foil so that the beet can be steamed while baking.

Bake for no longer than 45 minutes. Take the pouch out of the oven and be soothed by steam of the pretty fuchsia beets!
Serve the beets in salad with goat cheese, almond and greens or serve them as a side dish.
